These gluten free banana waffles are wonderfully simple to make and taste like a banana bread, but without having to patiently wait for a banana bread to bake.

And, best of all there are only 3 ingredients. (Which you probably already have in your kitchen right now!)

After having an overflowing bounty of over ripe bananas lately, and making mygluten free banana bread recipeevery other day for a week, I decided to come up with another way to make use of the sweet bananas with just a couple of other simple ingredients.

The best part is that you can meal prep the crispy coconut flour waffles ahead of time, storing them in a sealed container to enjoy a delicious waffle or two on busy mornings.

How To Make Coconut Flour Waffles

The best waffles recipecouldn’t be easier to actually make – the wet ingredients and dry ingredients are combined together in one large bowl before being cooked to perfection.

Simply mash the bananas, whisk in the eggs until smooth and then add the coconut flour (find it here on Amazon) and whisk until you have a thickened waffle batter.

If you’d prefer to make waffles with almond flour, then swap the 1/4 cup coconut flour for 1 cup of almond flour.

I used 2 smallish overripe bananas, if yours are bigger you may only need one and a half. Just start with less banana and you can always add more if you need it.(Here are more ideas for what to do with ripe bananas.)

You can thin the batter with a little almond milk, coconut milk, oat milk, whole milk, skim milk, heavy cream or a dairy free alternative. You could also make indulgent chocolate chip waffles with the great addition of your chocolate chips of choice into the gluten free waffle recipe.

You can also flavor the easy banana waffles batter with a pinch of sea salt, vanilla extract or your sweetness of choice such as stevia, coconut sugar or brown sugar, although I’m quite happy without any added sugar, with the bananas providing plenty of natural sweetness.

While you’re prepping your batter, get out your waffle maker, (here are waffle makers on Amazon) ensure it’s well greased with a little coconut oil, avocado oil, cooking spray or melted butterand then get it preheating to cook yourhealthy recipe.

Once your batter is ready and the waffle maker has preheated, pour the coconut flour waffle recipe mixture into the waffle maker and cook until each fluffy waffle isgolden brown anddone to your liking, the cooking time with depend on your personal preference and power of your waffle maker.

The fluffy wafflesmay need to be flipped, it just depends on the type of waffle maker you have.

I like to use an egg lifter, as my tool of choice, to carefully remove the healthy waffles without burning myself.

We love our waffles as a healthy breakfast or sweet treattopped with chopped banana, fresh fruit such as fresh berries, whippedheavycream, cream cheese,, mascarpone, chia seeds, drizzle of maple syrup or homemade chia seed jam.

  1. Get out your waffle maker, grease it well with melted coconut oil, or your oil or butter of choice,and get it preheating.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Add the eggs and whisk until smooth.
  4. Add the coconut flour and mix until you have a smooth waffle batter.
  5. Pour the fluffy coconut flour waffles batter into the preheated waffle maker.
  6. Cook until done on both sides and has crispy edges, flipping if necessary. (Follow themanufacturer’s instructions on your waffle maker)
  7. Carefully remove the crispy wafflesto a plate and enjoy with your favorite toppings, storing any leftover homemade waffles that have cooled to room temperaturein an airtight container to enjoy within a day.

Instructions

Get out your waffle maker, grease it well and get it preheating.
