Lavash makes an excellent base for thin-type pizzas. For this one bake the lavash 7 minutes at 375 degrees, add Parmesan, then bake 8 more minutes. Add topping. This crust works for many toppings, including some that can be baked with the crust from the start. We're currently liking vidalia onions, goat cheese and thyme, with a handful of arugula at the end. Don't overload if you want the crust to stay crisp.

The beans are marvelous here. But, they benefit from additional seasoning. I added 4 cloves diced garlic, Italian seasoning, diced red onion, s & p, topped w chopped parsley. Upped the oil to 2 TBL, increased brine.

Yum. Add crisp, cold wine (or beer if you prefer). Sit outside on porch, deck or in the yard before summer gets too humid. Forget about the calories. Enjoy.

We had a version of this last night with prosciutto instead of beans and used the no-rise pizza crust (so easy) and cooked on the grill. We put the prosciutto on before grilling but it is just as good added last with the pepperoncini for the meat-a-sauruses in your household. So good.

I've topped pizzas with fresh arugula and basil. My inclination here would be to...make the nice bean salad, dress and serve on the side of a plain cheese, garlic, olive oil pie, maybe with a few chopped tomatoes and fresh basil spread on top. My current fave is a 3-cheese, grilled chicken and slivered, blanched, marinated asparagus apizza, lightly splotched with my sauce, and little olive oil pools. I've been making pizzas weekly for the past 4 months. Thin crust, a crisp, crunchy must.

A gluten free version would be to make this with a farinata base! Good for celiacs

We have made a version of this for years using a whole wheat dough from our local store. To make it even more filling, we flake some lovely Tonnino tuna filets (in olive oil) into the salad mix and add that over the top. So good!

Lisa

Made it vegan with nutty parm (ground almonds & nutritional yeast) in place of Parmesan. Also added garlic to the beans. Delicious! I will use this rolling & dough transfer method for other pizza versions.

I've made this a few times (veganized) and it's wonderfully easy & delish-- great for a weeknight meal. Tonight I'm going to use flat leaf parsely and vegan parm. The parsely was from another post that I read....Thanks!

I love this recipe. I just made it for the fourth time using black eyed peas instead of white beans this time. I divided a batch of pizza dough into eight portions and froze them. Now I can make a single serving in the air fryer, four minutes at 400 degrees, flip it and top with the cheese, four more minutes then add the salad. This is my happy place.Yes, thaw the dough. Bring it to room temperature and use a little bit of parchment paper underneath

Agreed that this would be best served as a salad (added lemon zest, garlic and chili flakes on advice from other readers, which was excellent) and cheese bread separately.

Virgina

Had it as is and it was delicious.

We loved this, can't wait to make it again! I subbed pizza dough with one ready-made cauliflower crust and it was crispy and delicious. Since I only made one, I halved the other ingredients. No guilt for real pizza dough. Almost like diet food...hav not looked up calorie count for half a cup of parmesan cheese.

An easy & tasty meatless dinner option! Lemon zest + juice, plus fresh basil & 1 crushed garlic clove in the bean mix. Didn't have pepperoncini so no brine. Used Trader Joe's flatbread crust and added fresh mozzarella before baking. 9 minutes directly on the rack on convection bake at 375 and the crust was perfectly crisp. I must say I do miss TJ's discontinued frozen organic pizza crust!

Help! What's a good vegetarian friendly sub for parm? I usually use parmesan-like plant-based cheese because practically every real parmesan I've found has animal rennet (enzymes from the fourth stomach of an unweaned dead calf). Just recently I found a Dutch hard cheese for grating at Aldi, and one time at a Whole Foods I found a parmesan made by Bellavitano with no animal rennet. But those finds took years of searching and are not always available. Thanks for ideas!

@Lisa - Made it vegan with nutty parm (ground almonds & nutritional yeast) in place of Parmesan. Read the notes! Lots of good tips for vegans and wheat-free peeps.

This was easy, fast, and tasty! We subbed two plain cauliflower crusts, used the recipe toppings, and enjoyed them with cold beers. Good thing there were two pizzas, they disappeared fast!

We lowered the oven temp slightly to 450° due to olive oil's smoke point causing a cloud in our kitchen the first time we made this. We also add red onion, garlic, and prosciutto! Some of the ingredients we cook in the oven like a traditional pizza and others we scatter fresh on top after it's all baked (like the arugula).

carley

This is fantastic with a drizzle of mikes hot honey. Also added lemon zest and red pepper flakes. Will be making again and again. Perhaps next time I’ll add a protein for the carnivores in my house. Enjoy!

malahat

The salad was made as written and is dull. Lemon zest and fresh herbs would have helped.

A&A

So very good… added artichoke hearts and tons of black pepper at the end. Divine!

Liz

Yes but note arugula is not a very nutritious green; maybe spinach?

j

What? It's low in calories and high in fiber, vitamins, minerals, antioxidants and is anti-inflammatory. It's a good source of vitamin K, folate, manganese, vitamins A and C and loads of other good stuff. Sound research shows diets rich in cruciferous vegetables (arugula) reduce the risk of heart disease, cancer, and other chronic diseases.

WW

The white beans should be both rinsed and drained.
